"The New England Cookbook - 191 Favorite All-American Dishes" Published 1956 by The Culinary Arts Institute, Chicago From the foreword: "New England Cookery! What glamor can there be in those matter-of-fact words to make magic in the hearts of most Americans wherever they may live?...The dishes that we identify with New England are hearty, homely, satisfying foods. They are dishes created by thrifty homemakers to utilize the foods their hard-working menfolk wrested from the none-too-friendly soil and sea, acquiring prodigious appetites in the process. "Receipts" or "rules" for these dishes were handed down from generation to generation...The foods which were most plentiful were foods which might well have baffled the early new Englanders' English mothers - Indian corn and beans, squash, the small wild berries and grapes, maple sugar, the magnificent wild turkey, cod, clams, and lobster." This wonderful old New England cookbook is in fine condition but for some slight edgewear to the full-color cover. The 68 pages of the softcover volume are packed with luscious sounding recipes, catalogued in the alphabetical index at the back. The book is illustrated with black & white photography and color illustrations throughout, and is printed in the plain typeface common to many cookbooks of the 1950s. Most recipes have a bit of background written in, such as in the case of Griddlecakes: "Vermont has a pleasant way of stacking several griddlecakes with butter and shaved maple sugar between them, and serving them, cut in wedges, with maple sirup* and puffs of whipped cream - hearty and satisfying." *The New England Cookbook spelling of "syrup" Additional recipes include (but are not limited to!): Quahog Chowder ~ Lobster Bisque ~ Boston Brown Bread ~ Rhode Island Jonny Cake ~ Seventy-Fours (biscuits named for a sailor who liked them so much he ate 74 in one sitting) ~ Stay-Popped Popovers ~ Parker House Rolls ~ Baptist Cakes ~ Apple Fritters (very old, very tasty and very New England) ~ Red Flannel Hash ~ Cider Roast Ham ~ Yankee Pot Roast ~ Boston Baked Beans (and Baked Bean Sandwiches) ~ Crab Meat Mousse ~ Creamed Finnan Haddie ~ Mustard Pickles ~ Corn Pudding ~ Wellesley Fudge Cake ~ Maple Sirup Cake ~ Boston Cream Pie ~ Joe Froggers (molasses cookies) ~ Maple Sugar Cookies ~ Apple Pandowdy ~ Mincemeat Pie ~ Creamy Apple Pie ~ Indian Pudding ~ And so much more...!
